A Fresh & Healthy Start to Your Day #FedUpChallenge

The typical American breakfast is high in sugar and refined carbohydrates, and low in protein and healthy fats. Here are a couple of delicious, healthy breakfast recipes with no added sugar.

Veggie Scramble
This is a delicious low-carbohydrate breakfast.

Ingredients (organic preferred):
*2 eggs (omega-3 fortified preferred), beaten
*1 tbsp coconut oil or grass-fed butter
*½ cup chopped onions
*½ cup sliced mushrooms
*large handful fresh spinach
*2-3 cloves fresh garlic
*½ avocado
*⅛ cup crumbled feta cheese
*spices, to taste

Heat coconut oil or grass-fed butter in a saucepan over low to medium heat. Add onions and mushrooms; lightly sauté for 3-4 minutes or to preferred texture. Add eggs. Scramble until nearly cooked, then add spinach, garlic, and spices (cayenne and dill are great substitutes for salt and pepper). Sauté for 1-2 minutes or until spinach has wilted to preferred texture. Remove from heat and add fresh sliced avocado and feta cheese.

Save some raw garlic to add at the end for medicinal effects.

Blue Banana Smoothie
This is a well-rounded on-the-go breakfast. The blueberries and bananas will satisfy your sugar cravings, and the cinnamon will help you metabolize the natural sugars from the fruit. The healthy fat provided by the coconut oil provides a feeling of fullness.

Ingredients (organic preferred):
*¾ cup blueberries
*½ medium banana
*1 tbsp ground flaxseed
*1 tbsp chia seeds
*1 tbsp coconut oil
*1 cup unsweetened almond milk
*cinnamon, to taste

Blend all ingredients in a blender. Adjust almond milk volume to preferred smoothie consistency.
